Here's what you need...
1/2 cup of butter
1 onion, chopped finely
1/2 cup of chopped celery
1/2 cup of chopped carrots
1/2 lb. Sliced mushrooms
3/4 cups of flour
1 teaspoon curry powder
1 teaspoon ground mustard
1/2 teaspoon ground pepper
6 cups of chicken broth
4 tablespoons of Sherry
2 cups of cooked Wild Rice
1 lb. Cooked, shredded chicken
Fresh chopped parsley
Start by melting the butter in a pot. Add the chopped onion, carrots, and celery and sauté for 5 mins. Stir in the mushrooms and sauté for another 2 mins. Add the flour and combine with the vegetable mixture. Stir in curry, mustard and pepper and mix thoroughly. Add chicken broth and sherry. Bring to a boil. Then turn down stove and allow to simmer for an hour. At this point, the smell will make you so hungry!!

After it has simmered, add wild rice and chicken and heat thoroughly. Serve topped with fresh parsley (I recommend a green with every meal, so you can toss a quick salad together to have a well balanced meal!)
